Lunch/Dinner- Raw, thinnly sliced zucchini 'pasta' with tomato sauce

 

What You Need

Preparing the Zucchini (no need to cook it- the sauce will soften it up!)

  • 2 cups/225 g thinly sliced Zucchini (slice with cheese grater)

Tomato Sauce:

  • 1 can (190 ml) diced/whole canned organic tomatoes
  • 1 small (70 g) brown onion (finely chopped)
  • 1 clove garlic
  • 1.5 tbsp Tamari Sauce
  • 2 tsp coconut oil
  • Season with a pinch of salt & pepper, chilli, rosemary, garlic & basil
  • 1 tbs parmesan cheese to finish it off

What To Do:

  1. Slice the zucchini into very thin slices and place onto plates
  2. Heat coconut oil in saucepan (medium heat), add onion and garlic.
  3. Add the can of peeled whole tomatoes, season and mix well
  4. Add the tamari sauce and keep on cooking and stirring until it thickens to your liking
  5. Pour the sauce over the zucchini and add the parmesan
